I have mixed emotions about this one. I don't know why anyone would waste good raw oysters on the half shell by cooking them, but after trying it, I am willing to forgo having them raw occasionally for this treat.
I picked this one up several years back, again, spending time with my family at the beach. I always like to have at least one good seafood dinner from the fish that I have caught accompanied by whatever I find at the seafood market that looks good, and always a bushel of oysters to be shucked and eaten wiggling on the half shell. We like to drag a cooler full of iced down fresh oysters down on the beach and set up right on the beach. I shuck them and hand them out, usually getting one for myself to every two or three each for my wife and daughter!!! This particular time, though, we decided to try something different. I wouldn't swap my raw oysters on the half shell for them all the time, but they sure are good this way and are a great in addition to oysters served raw on the half shell either as a warm up for a good seafood dinner or just by themselves along with a cold "beverage"!!!
Shuck the oysters and place them on bread pans (or on the grill if you are grilling them). On some, sprinkle grated Parmesan cheese and on the others, squeeze a lemon and sprinkle with a little black pepper. Put them in the oven to broil for about 10 minutes or close the grill lid if you are grilling them. When the edges start to get curly, remove them and serve with your favorite ice cold beverage.
Allow at least a dozen for each person unless I am invited! Then, better get a bushel going!!!
