This is one that I grew up with. We used to go camping at the beach for vacation when I was a kid and my mother would always fix this dish at least one time while we were there. It can stand alone as a main dish for a quick and easy meal or be a great side when you are having fish and other seafood. I love to fix it every now and then, not just for the great memories of having it while camping, but just because it is a delicious way to serve three of my favorite foods, shrimp, rice, and mushroom soup.
I like to use instant rice, just because I can take a couple of cups of it and mix it with the same amount of water, put it in covered dish and stick it in the microwave while I am fixing the rest of the dish and by the time the rice is done (about 5 min.), the rest is ready. If you want to complicate things, you can steam regular rice or boil it, rice is rice to me, no matter how you cook it. While the rice is cooking, take a can of mushroom soup and mix about a half can of water, a little at a time, stirring well while you are mixing or it will come out lumpy! When the water is mixed with the mushroom soup, add about a pound of shelled and veined shrimp. Pour the mixture into a saucepan and heat gently to a light boil, constantly stirring. When the sauce/shrimp mix starts to bubble, the shrimp should have changed color, indicating that they are done. The rice should have cooked and set in the microwave for a couple of minutes by now, fluff it up and pour the mushroom/shrimp sauce over the rice and serve. The whole deal takes less than ten minutes and is great!!! I guess you could doll it up by adding other ingredients, but why would you want to, it is delicious just like it is!!!
