I was just browsing through the Shrimp n Grits section since I never really took the time to before. I was surprised that I didn't see any posts about plain old "fish nuggets". Every year about 10-12 of us go on a surf fishing trip in the Outer Banks. After coming back in from a long day of "fishing" there's nothing better than cutting up a whole mess of mixed catch, breading 'em, and frying 'em up. Our camp recipe is to mix cornmeal, flour, and some random spices (usually whatever is in the camp kitchen) - garlic, salt/pepper, seasoned salt - all in a ziplock bag. Then take all of your cut up mixed catch (last year it was flounder, bluefish, toads/puffers, whiting, etc.) and put it in a bowl and hit it pretty hard with Texas Pete hot sauce to get it all wet. Then take a handful of the fish, toss it in the ziplock bag of cornmeal mixture, and toss around to coat. Drop in hot oil for just a few minutes and serve with french fries, cocktail sauce, and your favorite adult beverage. It's a great meal after being out in the cold wind all day...if you can get any before all the kids eat it up!

Sounds like how I chunk up my large Catfish or Grouper....I call em fingers not nuggets....But all is same.....Ill have to try it with Texas Pete as I love that stuff!

There is not much better than a shore fried fish served with hot sauce and a beer that has been chilling in an ice bath..........except a shore grilled cobia chunk wrapped in a fire blistered tortilla with diced onions, cilantro and lime hot sauce mayo with a margarita on the rocks.
Sorry, I'm a chef by trade and love to cook outdoors.

troutman, that sounds like a fantastic idea. A bunch of my friends and I up here in Hilton Head/Bluffton have been talking about doing a kayaking camping trip before it gets too hot. Do any of you guys get out there and camp on a regular basis - or at least annually? We found a great little island a couple of weekends ago. High, protective cliffs with some nice tree cover and a small meadow in the middle perfect for building a fire, setting up tents, etc. To make it even better, about 3/4 of the island is completely surrounded by oyster reef, making it super convienient to "harvest" some dinner. Just to be sure, we had to sample a dozen or so on the half shell.

We should plan a flotilla to fish the Broad River Hilton Head for the spring cobia run in late May. I fish there every year but in a boat. This year I want to try in the kayak too!!! I have never caught a cobia in the kayak and it seems to me this Hilton Head fishery is our only shot, in this region.
Hwy 170 is the bridge to catch them! There is a launch right there. Sorry to highjack, I'll repost.

I fish the Broad River (and Port Royal Sound) by boat as well for Cobia. I think it would be the most realistic chance for a cobia on the kayak since it wouldn't require too long of a paddle to get right in the thick of it! I would absolutely be up for it!
